I was able to get a few loose but the adjusting nuts feel very tight and i am afraid I'm going to break them if i use anymore force. This is my first time adjusting the valves on this car and it sat for quite a few years before i got it so they are probably pretty seized on, does anyone know the best method to get these loose?

Valve lash adjustment nut and screw very tight

be mindful of the direction that your ratchet arm is facing. depending which way you push on it, you put more/less stress on the rocker arms. You want to avoid having them move side to side - so keep the wrench perpendicular for most force.
Once the lock nut is cracked loose, get a sturdy flathead (#3) screwdriver and twist the adjusters back and forth a bunch of times. Not far, just the range of your wrist. They will loosen up and be ready for a proper valve adjustment.

I've found that if I am concerned about rounding a nut, I might have the wrong tool. I recently did exactly what you are doing and encountered the same thing. A really precise wrench or a lobed wrench like a Metwrench, which grabs the sides of the nut instead of the tips of the corners will allow a lot more torque. I have one set of sockets that is noticeably more precise of a fit than my others and I used them to get the most stubborn valve nut loose.
I love cp[mike]'s suggestion about not pulling the rocker arms to the side. I didn't consider that when I was adjusting my valves. d'Oh!
