My family got in to town today we are doing Thanksgiving tomorrow. My bird will be going in the smoker around 10 tonight also doing a bacon wrap. Should smoke for 10-12 hours.

I will get pictures as I go.

25 Ib ham slow cooking in an electric roaster ...


13.5 Ib Turkey ... stuffed a pack of bacon between the skin and breast then laid 2 bacon weaves over it ... just put it on the smoker for a long night of cooking

I have found that removing the skin works the best, otherwise it's just a rubbery annoyance.

When you wrap the turkey in bacon, the skin doesn't get crispy, it ends up being rubbery....skin.
