17x7, 35 offset with tires of 205/40/17. Will I run into any issues rubbing. I'm not dropped low or anything. Spacers needed?

You don't need spacers on 7.5" wheel with +35 offset. As for rubbing, how low is your car? Depending on how low and whether your have camber kit or not, the rear might slightly touch the inner fender lip..just slightly, but again, it depends..

I'm not low like you are. Probably 2 fingers in the front and 1 and half in the rear. Car is also not cambered.
