Overheating in drive throughs

37.5 MPG, AC on, cruising at 80.
30.0 MPG, AC on, aggressively driving around 90.
27.5 MPG, no AC, cruising at 90 with occasional gridlock. 40 degrees Fahrenheit

I just did the rear motor mount, and when I did it last time it killed my heater core.
So, I'm looking very carefully inside under the dash, and watching them on the firewall side too.
The heat helped a very small amount. As soon as I saw it, the lady decided to hand me my food.
I was already distraught, and doing too many things at once made it worse.
This has happened in the past as well, when I switched to a lower pressure rad cap.
I may replace it just in case.
No further progress btw, I don't usually have time to look at it during the week.MRT

I had the same behavior on my 93 EX coupe. Stop at a light, temp gage would climb quickly, then drop back quickly simply by revving the engine. A head gasket leak was pushing the coolant out into the over flow tank, resulting in air bibbles in the system that would allow the temp to jump at low engine speed. I'm currious about something here.
Both my fans work just fine
My radiator has 50/50 in there
no leaks visible
coolant stays at the same level (checked when cool)
Oil is at operating level (checked when cool before drive)
I am not increadably convinced a blown head because I can sit for a good 5-7 mins before my temp rises
I took out the fan timer and replaced it once (made the fans come on after ignition was off) and I can feel the car bog like they kick on especially getting off the freeway, but at drive throughs and some stoplights i have to hit the heater
I have never seen the car's fans on physically unless the ignition was off
any idea's on that?

The fan timer should turn the fans on when the car is off, but the sensors turn the fans on when the car is running. So, if they are bad, then the fans won't turn on while it is running.
ECT B turns the fan on when the car is off 108C
